Anyone have a baking steel? I feel like I've taken my pizza game as far as it can go with my current setup and I don't ever foresee a serious pizza oven so this looks like the cheaper step to improvement.

Anyone out there ever make gnocchi from scratch?

I got the 'Pasta Grannies' cookbook for Christmas, and I tried using a gnocchi recipe from there, and it totally didn't work. They were all sticky and gummy. Very frustrating!

Same thing happened to me a while ago and I think it was due to adding too much flour to get it to hold.

I took a cooking class close to 20 years ago and we made gnocchi from scratch that turned out great. Doubt I have the recipe anymore.

(made scones this evening because one of my kids was pissed I walked to SB and got a coffee but no petite vanilla scones while she was a track practice and they turned out pretty damn great for so little work)

This phrasing is wrong, but it changes the homemade pizza from baked to cooked or something. If they make it to 6 minutes it’s on the cusp of being burnt where it used to take 10+ on a fancy pan or stone.

No, it is, but it halves the cooking time and extended cooking time is the biggest difference between what you buy and what you make.

We were attempting to reproduce SB’s petite vanilla scones, so four discs cut into 6ths.

Help me: I'm running out of ideas for things to make for dinner. Give me ideas...oldest daughter said 'something spicy', but it can't be too spicy (GF doesn't really do much spice).

For reference, we had lime-cilantro grilled chicken tacos last night. So probably not anything mexican.

Shrimp or scallops + mushrooms + grits with either scallions/chives or scallion/chive oil. Hot sauce lets you ramp it up/down as much as you want and you can always add a little cayenne to the seafood?

Gonna go with pork larb lettuce wraps. That way daughter can go more spicy with siracha as needed.

It's too late, but spinach enchiladas with black beans, sauteed onions, peppers, and hot peppers are always good. You can add some rice to some to mellow the spice if your peppers are too hot. The typical enchilada sauce you can find isn't that hot either.

(funny I never got into enchiladas when I lived in NM, but now that I'm an "ex-pat" they're probably my most cooked thing in the NM vein.)

My wife makes this a lot, and it's delicious. She doesn't have the peppers, and her onions are diced, and she also adds artichokes to the mix though.

(my culinary claim to fame is that I made a #10 (blue corn spinach enchiladas) for JFK Jr when I worked at El Patio in ABQ back in the day and he sent his compliments to the kitchen.)

Find some good marinades and/or rubs for chicken and grill 'em up!

Think of some of your favorite dishes you've had a restaurants, and try to recreate the recipes.

Try some different cuts of meat.

I don’t like cheese on fried chicken sandwiches for the most part. Grilled sure but not fried. No idea why.
