This is a good enough place ... y'all motherfuckers every spatchcocked a turkey? It seems easy enough in concept, but I've never made a turkey period let alone gone with this technique. Not something I feel like messing up with guests here. Also, anything on this menu you'd alter or add (key additions in parenthesis)?

Apps:
- French onion dip
- Pub cheese (horseradish)

Main:
- Turkey
- Mashed potatoes (chives)
- Sweet potatoes (little bit of maple)
- Stuffing (sage)
- Green beans (braised w/ bacon)
- Creamed spinach
- Corn casserole (here, will omit sage to avoid duplicating)
- Homemade rolls (leaning french over parker house for some weight)

Dessert:
- Salted Caramel Apple Pie (Four & Twenty Blackbirds recipe, if I get 75% there it'll be awesome)
- Brownies (Joanne Chang @ Flour recipe, I've made these and they kill)

it's super easy - you just have to be careful with cook time because it's far less than cooking a bird normally

(eta: I said super easy because I have a pair of the bird cutting scissors)

Looks great...and spatchcocking a turkey shouldn't be a big problem. I usually do that when I'm doing a roast chicken. Just be careful not to overcook it (the cooking time will be much shorter. And definitely use a good set of kitchen shears, not a knife. Will make it much easier.
