My wife asked me this morning what would happen with regard to the election if Trump were to pass away.

I'm not an expert of US election law, but given the primary has passed, the nominee is picked, with ballots printed and people have already voted, wouldn't Trump's name stay on the ballot?

There have been dead people that have won elections in the past.

In the event that Trump wins as a corpse, then I would imagine Pence would be sworn in as President in January, where he would have to appoint a successor as VP?

I think Missouri was the last state where a dead person won a national race. Mel Carnahan died in a plane crash a few weeks before the 2000 election for U.S. Senate, stayed on the ballot, and won. It was announced after his death, and prior to the vote, that his wife would take the seat in Carnahan's place if he won, so that's what happened. As an additional wrinkle, the Governor was responsible for naming the stand-in and Mel Carnahan was Governor at the time of his death. So Carnahan's Lieutenant Governor was the one who ultimately selected Mrs. Carnahan as the fill in. There was a Special Election held the next year, and Mrs. Carnahan lost to the challenger. I guess the rough equivalent would be Pence naming Melania (or Don, Jr. -- shudder) as the fill-in but it's pretty much uncharted waters so who knows what would happen. Anyways, it's a lot more likely that Trump is sick for a week or two, recovers, boasts about his recovery is proof that he has the world's strongest immune system, then loses to Biden straight-up.

Senators are elected by popular vote, the President isn't. I don't know if the electors are required to elect a living person, or one who is actually capable of serving per the 25th Amendment. That's an interesting question. But the whole thing is pretty different.
