Second batch was even better ( I think I had my water amount in the dough off). And I just ordered the non-diastatic according to a recipe they had on their website so I will try that one first. You're going to notice a color difference and, I think, better outside texture. But I could have just kept my last ones in a minute or two longer than normal.

(Next time I have to do them in two batches because the kids said they outside was too crispy. Should just get new kids.)

Total fucking disaster. My dough didn't dough. It was right between dough and batter so it didn't rise. Ah well, try again later.

Got a fresh from the oven batch last week, it was worth a couple of minute wait. But the not still internally warm one I had yesterday was good, too.

Sliced up a fresh jalapeño this AM to top my bagel and didn’t realize until after I didn’t wash my hands very well and rubbed my nose a couple of times that it was the rare really hot jalapeño.
I felt aswirl with warm secretions.

There’s been a little debate on our local NextDoor site about which local place has the best bagels. Normally I avoid that site like the plague. But I’ve been enjoying reading the petty bickering. To wit:
1: I like place a because the have chewy crust and soft middles.
2. Soft middle are not authentic NY style! It should be hard like rubber.
