I almost blinded myself with bacon grease a bit ago. Pork, when I usually work in turkey these days. Got a little complacent.

I'm considering curing a batch of bacon at home. Has anyone done this? If so, was it pretty simple or not worth the hassle? I don't have a smoker, so I'll need to roast it instead, but otherwise the procedure seems relatively simple.

I considered it too. Seems relatively safe and easy, but it would have been expensive and the odds of doing it right roasted seem pretty low.
