I did it once and it was good, but not as good as whatever secret source the good greek places use.

And I like the deconstructed eggplant idea. Bean salad on the side and you're set.

If you are bailing out on vegetarian chicks in Portland, the dating pool shrinks by at least 40%.

There are lots of great grilled vegetable options. You could even do grilled polenta, and then grilled vegetables with that.

I bought all the stuff for rellenos last night. Cooked the rice and am marinating some pineapple. I'm locked in. (Hopefully substituting pasilla peppers for poblanos won't be an issue.)

Since I was on the IR with the flu over Thanksgiving, I promised to go all out for Christmas Eve Dinner...

Anyone ever make a porchetta? What are some good side dishes to go with it?

I'm thinking something green would go with that. Like asparagus, maybe? And I think roasted red skinned potatoes? Those are my go-to sides for a dish like that. But that may be too much savory and not enough sweet.

Anywho, I made green chile goat cheese stuffed dates wrapped in bacon for my CrossFit gym's Christmas party and everyone was raving. So, so easy and so, so delicious.

I like that idea...I'll probably throw in some additional greens (spinach, arugula) just to add some variation to it. I'm also thinking of doing roast carrots with a harissa yogurt sauce, and then some kind of potatoes....

I'm in a rut, so someone throw out some "new basics" for the usual rotation. Right now I tend to fall back on grilling something, breakfast, some sort of fajita-ish meal because the kids will eat it or shrimp and grits. I'm ready for cooler weather and chili/braising/roasting but not for summer to end. What a conundrum!

We just threw walking tacos into the rotation. Open an individual size bag of doritos, pour in cheese, taco meat, and whatever other options to you want. Fun, easy, and tasty.

Homemade tacos have become a regular meal in the Sabo household. Considered making them tonight but opted for grilled chicken breasts instead.

It's really one of the most tried and true principles of cooking. Mix a bunch of shit together that's bad for you, and 90% of the time, it's bound to be delicious.

Have we visited pork shoulder in crock pot for easy carnitas? One of my favs and makes leftovers for days. You can do tacos, burritos, pull pork sammiches, etc.

I haven't, but I also have little interest in eating a whole fish at a restaurant. Doesn't gross me out or anything, just doesn't really excite me.

Just thinking of a family kinda meal. Being bored with grilling/pasta/mexican/breakfast doesn't leave me a lot of areas of expertise to help. Bonne chance mon ami.

Pretty much. Frito pie, to me, is more chili than just taco meat. Plus fritos instead of doritos.

Try this.

Preheat oven to 375.

Get 8 chicken thighs and put them in a large roasting pan. Season with salt.
Get a small bag of petite potatoes and put them in the pan.
Get a container of grape tomatoes and put them in the pan. Distribute evenly.
Get a jar of pesto and liberally coat the chicken thighs with the pesto.

Place in oven and roast for one hour.

Just finished dinner and everyone (even my son who doesn't like chicken) loved this. Easy and delicious. The only adaptation I made was salting and lightly sprinkling the potatoes beforehand.

Glad you enjoyed it. It's a simple dish to make, and is very tasty. Mrs. Sabo often makes this whenever I ask her to cook dinner, which is rare because she's not a gifted cook. As she once said, "John, you cook for flavor. I cook for survival."

But she is self aware. I have eaten 20 years of concoctions barely passable as meals and she still looks at me with completely naive eyes when she asks how does it taste. Her special skill in life is an ability to ignore external inputs and maintain an unshakable self belief. I need to get her back into sales.

Ha! Maybe you need to introduce her to Kranepool.

Mrs. Sabo said she considers cooking a chore, and puts it on the same level as pulling weeds in the garden or cleaning the bathroom. Knowing that, it's understandable why her dishes come out flat.

As a guy who has spent 20 years as a stay at home dad, I understand the sentiment. Cooking everyday and cooking for kids is a soul-destroying nightmare.
