The Sybian wrote: Tue Nov 03, 2020 8:39 am Made Chili on Friday. I always mix it up and make different variations. This time I used ground beef and andouille. I like beans, but keep it to a small amount. Flank steak is usually in the mix. I like multiple cuts of meat to add some texture. I use a mix of peppers, but this time I added a smokey hot sauce that added a great depth to the chili.

Here is where I'm going to lose most of you. Until my daughter finally stepped up to the plate, I'm the only one who eats chili in the house, so I get 4 or 5 meals out of it. To mix it up, I'll add it to spaghetti one day, or basmati rice. Friday I substituted butternut squash cut into spaghetti-shaped strands. Sacrilege, I know, but the sweetness of the squash with the heat and smoke was a great combo.

The problem with my daughter liking chili, I need to separate her portion before I add the peppers. Friday I didn't make any for her, and damn was she pissed. She insisted on eating it, and used half a bag of taco cheese to dampen the heat. Proud of her determination, but that can't be healthy to eat that much cheese.
A dollop of Daisy will do it.

I think the most upsetting thing is that reads so much like what I do aside from the meat switch. I'm thinking this is going to be the key.

So cheese and oyster crackers.

I'm a chili with Cheeze-It's guy...and it has to be traditional or the extra toasty.

Oohhh, Cheeze-Its with chili. That's genius.

I love the oyster crackers in garlic idea.

I once made a Tex-Thai chili that actually came out great. Wish I wrote down what I put in it, because I don't remember. I was perusing an Asian market and got inspired. I bought a giant bag of Thai Bird's Eye chili peppers pictured below. They are about an inch or two long, so I used a bunch of them. Not sure if I added habaneros, jalapenos or neither. I added ginger with the usual garlic and I think Chinese 5 spice to the usual cumin and cayenne. I put in a lot of Sriracha for a bit sweetness.

This last batch, I decided to throw in a poblano pepper to the mix because they looked really good and fresh. Never again. They were flavorful, but just bitter and they and didn't cook down nearly as well as any of the other peppers. I'm wondering if you need to fire-roast poblanos before cooking with them. I knew they were mild, but they added no heat at all.

* if you don't know, once you roast put the peppers in a ziploc as they cool the humidity makes peeling that much easier.

Around a month ago I discovered cast iron pizza. Couldn't be easier. Pre-heat pan in 500 degree oven. Tablespoon of olive oil. Store made dough. Sauce. Cheese. 15 minutes later it's done.

I'm new to cast-iron. Does anyone have anything that works well beyond using it as a non-stick stove top?

Best steak you can make at home. Get that baby ripping, preheat the oven to 500. Sear the everloving shit out of both sides of a ribeye for 90 seconds, throw in the oven for about 1:00-1:15 depending on how done you want it, flip, another 1:00 to 1:15 and you'll wonder why you ever paid 80$ at a steakhouse for that.

Throw some compound butter on there es magnifique.

He is? I don't see it. Saying he's been a conservative most of his life as a white man in Georgia who has worked in television for the last 20 years is hardly a revelation. He's been pretty clear in his videos and interviews that he's wanted no part in the recent GOP crap and condemns it.

I don't agree with conservatives at all but I think outside of Trumpism, there was at least room for common debate as far as policy structure goes.

Trump has really lead to some ex-post-facto stuff I'm not a fan of. People who stand by this should be condemned, but Brown doesn't seem to be one of them.

I don't think Brown was making a holocaust joke, like where the subject was intended to draw cheap or shock laughs. Seems much more like gallows humor / despair manifested with questionable wording.

I've been watching his youtube live streams with his wife and he's certainly been drinking his fair share.

I think the holocaust thing was a dark humor thing but I can see how that shit rubs people the wrong way.

That said, I'm over people insinuating that if you make them mad you're canceled "as a (formerly) religious Good Eats viewer"...fuck out of here with that. Also I'm all for calling out people's bullshit but when your Twitter handle is "yesyoureracist", I tend to think you're not out there trying to correct injustice, you're out there looking to get offended.

Tried a bit on some tortilla chips to make sure I wasn't gonna die, then dosed a bit of it on a fajita bowl I made last night: brown rice, half a red pepper and sweet onion, and some thin sliced strip steak I made in the cast iron last night. Little cojita, avocado, and some of the Juansauce.
