Also, I find boils to be annoying and kind of gross. I like everything involved, but I don't need my corn and sausage to be sitting in a seafood boil. I'm already getting that flavor with, you know, the fucking seafood on hand.

On the first part, my personal seafood experience had always been deep fried growing up. I only remember lobster being boiled during holidays. And shrimp was eaten cold with cocktail sauce or as part of a dish. On the second part, I find that interesting. I can understand the eating with your hands aspect not being the most sanitary, but the flavors of everything mixing, plus adding seasonings during the boil, made a ridiculously delicious meal. At least to me.

Had low country boil in Charleston at a restaurant known for it. Simple preparation, but man was it good! Very proud of my 23/25. People lose their shit for crawfish down here. I enjoy the food, but the work it takes to get full isn't worth it, so I'm about a one boil a year type of guy unless I know there's other stuff to eat too. The parties are typically a blast.

Never did it proper, I guess, but have had a 'boil dish at a restaurant in HHI SC.
There are at least two restaurants in the NJ shore town we go to every year dedicated to seafood boils. You can pick them up steamed or take it home and do it yourself. We haven't tried those.
