Don’t finish chapter 4 untl you’re good and ready. Don't want to click those spoilers, so just to ask: is it more a matter of "you won't be able do that stuff for a while" or "you won't be able do that stuff anymore, period"? Because I am really tempted to bore through the main story and then just mess around with the side stuff in the end game.

I have to try and do the side quests first. I've caught 4 big fish and a few on the hunting ones. Just can't decide if I need to head north up the river on the east side to get some stuff done.

Both. You’ll be able to finish side quests later, but you might’ve noticed there are chapter missions that become available that effectively end the current chapter and start a new one, potentially leaving behind unstarted missions. OK red deaders...I'm not really sure where I am in the game. To be as vague as possible I'm at the second place the group camps. And have been playing both sides in the Hatfields/McCoy/Gray/Braithwaite shit. Then I got to a point where that is no longer tenable after a yellow mission.
So do i need to go around and do my hunting and shit and get as much of that done as possible? Feel free to answer with as few spoilers as needed.

The question you wanna ask is whether or not you want to do them as Arthur Morgan or John Marston. The status of all the quests carry over. So I finally got to the Chapter 4/5 transition and yeah, I wish I had taken Enoch's advice more strictly. Waiting to see how long before the game returns to "normal."
As an aside: I don't know if there was a patch, but after getting about 30 hours in without anyone calling me a "cocksucker," it's now happened four times in the last few.

I did a mission in Ch 6 where Sadie and Arthur go bust John Marston from prison...As I approached her, my horse went nuts and bucked me like I was doing his sister. The gator didn't seem too bothered though. He was just sunning himself. You know...regulating that core temp. So yeah, he wasn't in the water so he was mentally shut down. Not saying you should go pet a gator outside of water, but the vastly prefer to hunt in the water rather than land.
So anyway, I shot him dead and skinned him for his hide.

If you like to retro game, I highly recommend a RetroPi setup. Buy a raspberry Pi, a few USB controllers and you can play emulated games from all kinds of old systems. I have just been dominating my kids in Nintendo hockey (fat guy, skinny guy, etc), balloon fight, Techmo Bowl, RBI Baseball, NBA Jam, street fighter, old EA Hockey, etc.
