Shallots punch everything up. I make a quick vinaigrette with EVOO, Balsamic, kosher salt, and cracked pepper. I chopped up about a teaspoon of shallot and mixed it in, and now it's the perfect go-to.

Looks nothing like the "Italian" subs I had growing up in Boston, but it's definitely a really awesome looking Italian sub.

Never got the appeal of an italian. Too much going on, and it never adds up to more than the sum of its parts. I'll take the gestalt of the few basic ingredients in a banh mi or cubano any day.
