I recently read that anchovies make a great pairing flavor with chicken. And tried something that turned into a crowd-pleaser tonight.
Threw some anchovies (in their oil), garlic, and capers as the base in a cast iron. Added boneless skinless thighs. Deglazed with white wine. Added some chicken stock. Threw in some cauliflower and spinach. Finished with lemon juice and freshly grated garlic. Super easy, delicious, healthy.
We had leftover potatoes from yesterday, but it would go well with rice or any side.

Anchovies are great for adding that Umami bit to something. You can get tubes of anchovy paste (similar to the tubes of tomato paste) if you don't want to cut up a filet. I have a buddy who cooks pizza on his pellet smoker. They’ll invite a bunch of us over and have all the staples for toppings (including green chile because he’s from New Mexico). My go-to has been pepperoni and anchovies.

To your point about fishy taste, there was no taste of anchovies at all in here. And I used two tins. Something about the way it just blended perfectly with the chicken and veg.

I need to get out of my cooking comfort zone which is mostly the basics plus southern and latin american so I went to my first indian market (Rt 22 in union for you local boys) and now I want to go to every possible non-american market.

After living in Iselin (Largest Indian population in North America) I got used to Indian markets. Stop in at one near my daughter’s soccer field at least once a month. It was rough during the varsity season, because there aren’t any near me. I’m obsessed with Indian snack mixes. This brand is my favorite. I've tried just about everything in the snack aisle. Some great, some godawful, but even the horrible stuff is really interesting to try. I also stock up on the vegetable/dal side dishes that come in a pouch. Nice quick side dish when I don't have time to cook.

Yeah pretty sure they’re related. I want to say it even used to be named Deep but I could be wrong, it’s been there for a long time.
We have a couple of (3?) Filipino markets in/near the center of town. I think there is a small African market next to a related restaurant on Morris Ave headed towards Springfield. Another small place that advertises as Halal. Blanking on any others.
